Much of Gurgaon's labour would go hungry were it not for the hundreds of open and street-side small kitchens and cart-based eateries in various areas of Gurgaon. In almost all seasons, with no wherewithal to keep food refrigerated or have food that's fresh and piping hot - skilled and unskilled work force in Gurgaon relies on 'thela kitchens' and four-wheeler mobile food kiosks for their meal requirements. The shade of trees provides natural air-conditioning, seating is often stone and wooden slabs and brick chairs collected from nearby, parking and view are free, and 20 per cent of the bill does not constitute taxes.
